From someone who was born and raised in Chicago:

Very good famous places:

Giordano's (my favorate stuffed)
Gino's East (my favorate pan)
Uno's (very good stuffed and the place that invented stuffed)

Very good not-so-famous local places:

Pat's (I agree with Mark, VERY good)
Piece (very good authentic "New York" style 'za.)
Chicago Pizza (north side)
Connie's (south side)
Ranelli's (I grow up on this pizza. One of the best thin 'za's in the city)
